Specialty coffee refers to a category of exceptional coffees: grown at high altitudes ⛰️, hand-picked 🍒, then processed with artisanal precision.
Here, there is no standardization : each batch is unique, each cup fully reflects the richness of its origin.
A vintage, in the noble sense of the term 🍷.

🎯 Accurate rating, a guarantee of excellence

The term "specialty coffee" is not marketing .
It is an official recognition , established by the SCA (Specialty Coffee Association), based on a very rigorous tasting protocol.

🔍 The 5-step protocol:

  1. Green coffee analysis : zero major defects 🟢

  2. Standardized roasting : to reveal the intrinsic qualities of the bean ♨️

  3. Blind cupping : neutral, unfiltered tasting by certified Q Graders 👃👅

  4. Sensory evaluation : aromas, acidity, sweetness, body, balance, length… everything is scrutinized 🧪

  5. Final scoring :

  • 🟠80 to 84.99: Very good

  • 🟡85 to 89.99: Excellent ( Grand Cru )

  • 🔴90+: Exceptional — rare, complex, unforgettable

Because not all our coffees tell the same story, we have structured our selection into three ranges, according to their SCA score :

  • ☕ Specialty Coffee (84–85)
    → Accessible, fresh, balanced coffees, perfect for beginners or for everyday use.

  • 🍷 Grand Cru (86–87.99)
    → More complex, deeper, elegant profiles. The balance between finesse and intensity.

  • 🔥 Exceptional Coffee (88+)
    → The pinnacle of our standards. Rare, sometimes confidential coffees of unforgettable complexity.
