It's a technical and sensory masterpiece , crafted by Wilton Benitez , a major figure in the new generation of Colombian producers. At Granja Paraíso 92 , Wilton doesn't decaffeinate to remove – he decaffeinates to reveal.
Its method relies on a 48-hour anaerobic fermentation of the cherry, followed by controlled drying at 38°C for 48 hours . The coffee is then naturally decaffeinated using the sugar cane process – a gentle, non-invasive technique that preserves the aromatic integrity of the bean while removing the caffeine.
Aromatic profile: brightness, grace and perfect balance
This coffee leaves no room for doubt:
