Women's Crown is more than a cafe: it's a symbol.
Originating from the renowned Gasharu station in the Nyamasheke highlands, this exceptional batch showcases the expertise of women , from manual selection to final sorting, including fermentation.
A highly precise, two-stage anaerobic process
The cherries, harvested at peak ripeness, are sorted with water and then gently depulped using a McKinnon disc. This is followed by a dry fermentation of 12 to 14 hours , before a second sorting by density to retain only Grade A. This superior batch then undergoes a second controlled fermentation of 8 hours , followed by slow drying for 16 to 20 days on raised African beds, under constant supervision.
