Controlled fermentation for a crystal-clear cup
This Bourbon Ají is fermented according to a precise protocol:
– 36 hours of oxidation in cherry form,
– then 70 hours of submerged fermentation after pulping,
– before a traditional slow drying process of 12 to 15 days.
This delicate process reveals a pure, luminous and floral cup, without excess, of remarkable clarity.
Aromatic profile: subtle, airy, and structured
– On the nose: jasmine and vanilla , ethereal.
– On the palate: a fresh, vegetal entry of green tea ,
– then an evolution towards delicate lavender ,
– supported by a silky and balanced texture .
The finish is long, sweet and fragrant , without heaviness, with a persistent floral elegance.
