Controlled fermentation for a crystal-clear cup
This Bourbon AjΓ is fermented according to a precise protocol:
β 36 hours of oxidation in cherry form,
β then 70 hours of submerged fermentation after pulping,
β before a traditional slow drying process of 12 to 15 days.
This delicate process reveals a pure, luminous and floral cup, without excess, of remarkable clarity.
Aromatic profile: subtle, airy, and structured
β On the nose: jasmine and vanilla , ethereal.
β On the palate: a fresh, vegetal entry of green tea ,
β then an evolution towards delicate lavender ,
