Originating from the highlands of Acevedo, this Bourbon Sidra is the result of the meticulous work of Jhoan Vergara , a leading figure in Colombian specialty coffee. At Finca Las Flores , technical innovation is used to create a subtle, powerful, and structured aromatic expression.
Controlled fermentation and precision drying
After 12 hours of oxidation in the cherry, the beans undergo a 48-hour anaerobic fermentation submerged in water , followed by a thermal shock at 50°C , and then a double drying process (24 hours mechanical drying + 15 days in a ventilated shelter). This process stabilizes the aromas and enhances the clarity of the cup.
Aromatic profile: controlled intensity and elegant length
