A family story rooted in the land and the heart
Founded in the 1980s by Madame Pastora Anacona , the Villa Pastora farm is now run by her grandson Gerson Mora , alongside his father Álvaro Mora . From generation to generation, the Mora family has passionately cultivated a distinctive coffee, showcasing a rich terroir and exacting expertise.
A place of memory, culture and transmission, Villa Pastora is also a community center , employing local workers and sharing its fermentation and drying equipment with other producers in the sector.
A precision process, at the service of aromatics
Pink Bourbon cherries are rigorously selected, then subjected to a controlled double process:
– 48 hours of controlled oxidation ,
– followed by 48 hours of anaerobic fermentation in a sealed tank .
After that, the coffee is dried for 8 hours in a mechanical silo , then for 14 days under a ventilated shelter , ensuring a stable, aromatic, and perfectly clean cup.
Aromatic profile: ripe fruit, sweetness and floral delicacy
This Grand Cru offers a warm, structured and seductive aromatic profile:
– Fresh grapes , as an opening
– Ripe mango and peach , in the heart of the mouth
– A sweet, enveloping and lingering vanilla finish
The cup is balanced, creamy, with delicate acidity and a clean, crisp finish . A lovely depth without being excessive.
