A coffee born in the heart of the Guji forests, in one of the most prized terroirs in the world

Dimtu Shakiso comes from the mythical Guji area, the cradle of the most expressive Ethiopian coffees.
At Tero Kebele, between 1,850 and 2,128 m , the cherries ripen under a rich and preserved natural canopy : Albizia, Cordia Africana, Enset (false banana), Croton, avocado trees, mango trees, guava trees… A living forest in which the coffee trees grow, protected, nourished, raised as in an original ecosystem.

The Dimtu station, founded by Getachew Zeleke , works with 692 small producers committed to sustainable and certified practices: Organic NOP / EU / JAS and Rainforest Alliance .
A rare, meticulous, traceable production, where each batch is tracked from the terroir to the drying room.


A remarkably precise, natural treatment

The Dimtu station stands out for its rigorous methodology, which is rarely equaled:

Selection by flotation

Immediate removal of immature, fermented or floating cherries: only perfect cherries proceed to the next stage.

Drying on African beds, in traceable batches

Each bed is identified , separated, tracked — a level of precision usually reserved for exceptional micro-batches.

Drying under natural shade

A technique that slows down dehydration, developing superior aromatic complexity.

Continuous humidity control

Each phase is validated by the quality team to guarantee stability, freshness and aromatic purity.

An expressive cup, true to the Guji spirit

Aromatic profile: elegant, floral and fruity

  • Upon opening: a fresh bouquet of orange blossoms , which sets the floral tone right from the start.

  • In the cup: juicy, fruity and sweet blueberry , combined with a lively hint of lemon that awakens the aromatic palette.

  • Final: a clean, delicate, almost tea-like sensation, leaving a persistent floral imprint.

The profile is reminiscent of what many look for in a "natural Guji": a combination of fruity acidity , gentle sweetness , and elegant floral freshness , with a balanced body. Some enthusiasts even note hints of honey, malt, or citrus.
